Menemen is one of the easiest Turkish dishes which is very popular among students as ingredients are cheap and easy to find. It is a mixture of tomato, pepper, onion and egg. That’s all. In Turkey, it can be served as a breakfast, lunch or dinner. I don’t have any preference, I like to eat it all the time :-)

6 tbsp olive oil
2 green peppers – finely chopped
3 tomatoes finely diced and peeled
4 large eggs – whisked
1 onion – finely diced
Mozzarella cheese (optional)
Cayenne pepper


1. Heat the oil in a frying pan and chop the peppers, tomatoes and onions
2. Stir in the onions and peppers . Cook until they begin to soften (3 minutes)
3. Add the tomatoes. Cook until the liquid has reduced (around 5 minutes)
4. Whisk egg ( and cheese if you use) in a bowl and add it to the mixture with salt and cayenne pepper and stir it. It will be ready in 2 minutes :-)
